5 Egg Recipes That You Can’t Resist To Eat In Brunch

Some people have sweet food cravings, some have spicy food cravings while some have egg food cravings. Yes, there is a large portion of people in this world who loves to cook and eat egg and they always try to innovate dishes with eggs.

As we know life has become so busy, this doesn’t let egg lovers enjoy their favorite egg dishes.

So, if you are planning to enjoy a special brunch this weekend try 10 recipes with a little Latin touch.

1. Baked Eggs With Chorizo

Ingredients:
1 onion, diced
3 cloves garlic, minced
2 cups crushed tomatoes
3 chorizo sausages, casings removed
1 tablespoon maple syrup
1 whole chipotle in adobo sauce, chopped
1 teaspoon adobo sauce
1/2 cup cilantro, chopped
1 teaspoon cumin
1/2 teaspoon smoked paprika
3/4 teaspoon orange zest
3-4 eggs
garnish: green onions, cilantro, feta cheese, avocado

How to make:
Heat a pan over medium heat to sauté onions till it gets browned, now add garlic and saute it also for 2 minutes. Now, add all ingredients together except eggs. Then, lower down the flame and crack eggs on top till it gets set. For plating: garnished with sliced green onions, crumbled feta cheese, cilantro, and a side of avocado slices.

2. Breakfast Quesadillas

Ingredients:
3 rashers of streaky bacon, chopped
4 flour tortillas (Note 1)
4 eggs
1 large avocado, halved and sliced
1/2 cup grated cheese (I used cheddar)
Salt and pepper

How to make:
Heat a skillet and add the bacon, cook till you want, then remove the cooked bacon onto a plate. On the same skillet again, add a tortilla and then avocado slices around the rim of 1/2 the tortilla and then, thinner the slices along the middle to form an egg roll structure and squish both corners together so that egg doesn’t come out. Now, crack an egg into the center, sprinkle with bacon, cheese and season with salt and pepper and again cook the both side of tortilla till it gets golden in color.

3. Huevos a la Rabona

Ingredients:
½ red onion, finely diced
2 tablespoons rocoto, finely diced (or any red-hot chili pepper)
2 tablespoons cilantro leaves, chopped (optional)
Salt and pepper
1 tablespoon vinegar or lime juice
1 tablespoon oil
4 bread slices
2 tablespoons vegetable oil
4 eggs

How to make:
Put rocoto and onion in a large-sized bowl and cover it with cold water for 10-12 minutes, then drained properly. Now in onion and rocoto add pepper, vinegar cilantro leaves, salt, and 1 tablespoon oil. Fry the slices of bread and then fry eggs with vegetable oil and sprinkle some salt. For plating: Take a dish, and put one slice of bread with fried egg on top, 2 tablespoon onion mixture on top of each fried egg.

4. Mote Pillo

Ingredients:
1 lb cooked mote or hominy, can also use canned hominy
2 tbs butter
4 eggs
1 cup of diced white onion, can also use spring onions (white part only) or leeks (white part only)
2 garlic cloves, crushed
¼ Tsp ground achiote
¼ cup milk
2 tbs chopped chives or scallions
1 tbs finely chopped cilantro or parsley
Salt to taste

Methods:
Heat oil or butter in a pan, add crushed garlic, achiote, chopped onions, and salt to taste. Add the mote and cook for 2 minutes. Now, mix milk in mote and cook till the entire milk by the mote. Crack the egg into the mote and cook for about 3-5 minutes. Stir in the scallions and parsley.

5. Huevos Rancheros

Ingredients:
1 tablespoon vegetable oil
1/2 medium onion, chopped
2 garlic cloves, minced
1 (14.5 oz) can fire roasted diced tomatoes
1/2 teaspoon dried oregano
1/2 teaspoon ground chipotle
1/2 teaspoon kosher salt
1/2 cup chicken or vegetable broth, divided
4 (6-inch) flour tortillas, plus more for serving
1 cup refried black beans
1 1/2 cups Mexican blend shredded cheese, divided
4 large eggs
1 avocado, sliced, for topping
coarsely chopped fresh cilantro, for topping

How to make:
For Salsa
: Add grated onion, tomatoes, jalapeno, chopped garlic, hot sauce, cumin and salt and pepper to taste in the bowl. Now, heat a pan and add 2 teaspoons of olive oil and add-on the mixed salsa and fry for 3 minutes. Now, removed the fried salsa from the pan and to the same pan add beans, smashed garlic, 1/2 cup warm water and salt to taste. Now, it is time to add your favorite ingredient egg: fry the eggs and season with pepper. For Plating: Take a warm tortilla on a plate and beans, then top with a fried egg, some salsa, and cheese.
